Happy Wednesday, W+A readers! Its a sunny day on the Island, but a tad bit chilly. I brought Moo out for a nice afternoon walk and caught a few rays. My body is craving vitamin D and I can't wait until its warm and sunny at the same time. Yesterday I had a terrible headache and thought it may be my body detoxing from sugar, so I figured I'd have some Greek yogurt with a tablespoon of granola and a few sliced strawberries to shock the body a bit. It did the trick for a little, but I was taking Motrin all day to ease the annoying pain. I actually woke up this morning, made myself a cup of coffee and oh my god felt a thousand times better. I guess all I needed was some caffeine and lots of water to do the trick. I started buying the huge containers of Greek yogurt, this way I can measure out how much I want and its a lot more cost efficient. And, Target's Market Pantry brand has the most delicious Greek yogurt, who knew? I typically only buy Fage, but when its not on sale it can be a bit pricey. I am happy to finally have found another brand of Greek yogurt that I enjoy. I picked up some groceries yesterday and ended up spending $100 bucks on a "quick trip to the supermarket." It always happens without fail! I grabbed some blueberries and other essentials to get us through the weekend.
We decided to make cheese and parsley chicken sausage for dinner, which is one of my favorites. Its the best grilled on the BBQ during the summer, but we decided to bake it in the oven with some hot and sweet peppers and some chopped onions. I like to drizzle everything with a little bit of olive oil and add some crushed red pepper flakes for some heat. I then cover with a layer of tin foil nice and tight and bake for about 45 minutes on 400 degrees. Once the 45 minutes is up, I take off the foil and bake for another 15 minutes until my sausage is nice and browned and my peppers and onions are soft. Its a super easy meal to throw together and is always satisfying after a day's work. I decided to bake two sweet potatoes and topped them with a teaspoon of light brown sugar—they were cooked perfect and were just that little bit of sweet we needed. I like to cook my sweet potatoes for a while so they come out super soft. First, I take a baking sheet and cover with foil. I then poke a few holes into them with a fork and set them on the baking sheet cooking on 400 degrees for a good hour and a half. I make sure to flip them a few times so both sides are evenly cooked. Some people prefer wrapping them in foil, but I've tried both methods and have found this one to be the best.
The chicken sausage came out so good. I measured mine out into my red protein container and gave John the remaining. It was just enough for the both of us and the sweet potato was the perfect side. Sometimes I will even slice up some potatoes and throw them in with the sausage and peppers. You can even add sun dried tomatoes, mushrooms, zucchini, squash—whatever veggies you prefer.
Tonight we decided to order in some soups and salads and kick back a bit. We have some shows on the DVR to catch up on too. Today is day 10 of the 21 day fix, almost half way through and I feel really great! I'm not just eating whatever and counting calories, rather, I'm eating things that are good for me and will keep me full and feeling satisfied. I definitely plan to follow the program even after the 21 days are finished and will be ordering more of the chocolate Shakeology packs. They are so delicious and satisfying and help me to get in extra fruits too. Tomorrow night we are having dinner by out friend's house, so another night off from the kitchen, but I will definitely have some new recipes up for you all during the weekend! I plan to make a fruity oatmeal bake for my breakfast next week. How yummy does it look? Well, enjoy the rest of your evening, all. Happy almost weekend :)
