Vanilla Sprinkle Cupcakes

Its a snowy/rainy day on Long Island, so we decided to brighten up our morning with some delicious sprinkle cupcakes. The best thing about them is there low calorie (only 125 each cupcake) and low in sugar (12 grams in each). They are the perfect bit of indulgence to satisfy any sweet craving. And if you'd like to get festive for Valentine's Day add your favorite heart candies to the tops of your cupcakes for some added decor. Here's everything you will need for these lovely little treats: 

Ingredients (cupcake)
1 c all purpose flour
¼ c funfetti cake mix 
1 tsp baking powder
½ tsp baking soda
¼ c unsweetened apple sauce
¼ c sugar
2 egg whites
¼ c vanilla 0% greek yogurt or plain
1 tsp vanilla
½ c skim milk

For icing
1 package fat free vanilla instant pudding mix
1 cup skim milk
1 cup fat free cool whip
¼ c sprinkles

Directions (yields 12 cupcakes)
Preheat your oven to 350 degrees. Line your muffin tin with muffin liners. In a bowl, mix together the apple sauce, sugar and egg whites. Add in your yogurt, vanilla and half cup of milk. Mix in your flour, cake mix, baking soda and baking powder. Fill your muffin liners half way and bake for 17-18 minutes. Meanwhile prepare your icing, whisk your pudding mix with one cup of milk and add in cool whip. Let cupcakes cool and then pipe your pudding icing out of a pastry bag or piping tool onto the cupcakes. Top with sprinkles. We suggest storing them in the fridge to keep fresh.

Chocolate Chip Banana Bread

Banana bread is always a go-to when you have extra bananas hanging around the house. Its perfect for breakfast or a sweet treat after dinner. Toasted up with some butter or topped with your favorite jam or nut butter. We whipped up this simple and delicious recipe in just about an hour (including baking time). Sicilian Lemon Ricotta Cheesecake

I hope you all had a relaxing and enjoyable Thanksgiving break. We spent the holiday by my parents, but that didn't stop us from making our own turkey on Thursday morning. I love making roasted chicken in the oven, its one of our favorite go-to meals so I figured a turkey had to be pretty much the same thing. I preheated the oven on roast at 350 degrees and gave our bird a good scrub down of freshly squeezed lemon and kosher salt. I mixed together a baste of salt, pepper, minced garlic, smoked paprika and extra virgin olive oil and brushed it all over the turkey.
