Fusilli With Marinara Sauce


Happy Saturday everyone. I know I promised I would post the finished project from last night's pasta dinner so, here it is. Homemade marinara sauce with Fusilli. I like to add a few scoops of low fat or part skim ricotta cheese to the bottom of the dish and top it off with some crushed red pepper. I remember having this dish all the time at my grandmother's house. Its super simple and really satisfying. Fusilli is one of my favorite pastas and I typically prefer the longer version. I love how the corkscrew shape picks up all of the sauce and cheese between each swivel.


I also made sure to pour myself a glass(es) of wine to unwind while finishing up season three of House of Cards. I can't believe we have completed all 13 episodes. Seriously guys, we are addicted. If you haven't watched it yet or started to and couldn't really get into it, make sure you give it a chance. Its amazingly good and I promise you will not be disappointed. Kevin Spacey and Robin Wright are insanely talented.


While we prepared our Friday night pasta, I sipped my wine and John made a little apertivo to pick on, Spanish olives, EVOO, salt, pepper and some crushed red pepper flakes. They were so salty and yummy and hit the spot. They didn't have a chance making it into our salad bowl.   


Tomorrow we plan to do a light food shopping. I've been really in the mood for a big pot of warm soup, so I think that is what I will be cooking all day tomorrow for next week's lunches. One of my best girlfriends recently made a delicious kale, white bean and sausage soup (how delish does that sound?) But I was thinking of doing my own play on her recipe and whipping up some Italian sausage and potato soup. The recipe calls for a few different ingredients I don't have available in the house, so I'll be sure to add them to our shopping list. Well, I'm off to enjoy tonight's festivities. Almond Poppy Seed + Lemon Loaf

Happy Spring? Yes,  the question mark is needed since we had snow on Long Island today and its April second! I'd say about six inches total, but we were happy to see the sun appear and melt some of it away. We started on some yard work this week and were getting the itch to start doing some planting, but luckily we held out for now. Chocolate Chip Banana Bread

Banana bread is always a go-to when you have extra bananas hanging around the house. Its perfect for breakfast or a sweet treat after dinner. Toasted up with some butter or topped with your favorite jam or nut butter. We whipped up this simple and delicious recipe in just about an hour (including baking time). Here is everything you will need for this lovely  Chocolate Chip Banana Bread: Ingredients 3 ripe bananas, mashed 1½ cup flour 1 teaspoon baking soda ½ teaspoon baking powder pinch of salt 5 tablespoons unsalted butter, melted ½ cup brown sugar 1 teaspoon vanilla extract 1 egg 1 cup of chocolate chips Directions  Preheat your oven to 350 degrees. In a large bowl, use a mixer to mix the melted butter and brown sugar until sugar is dissolved. Mash bananas with a fork and beat in with egg and vanilla extract. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Combine wet dry mixtures. Fold in most of the chocolate chips, reserving

Lemon Butter Parmesan Pasta

What's better than some comfort food on a chilly day? We love making this simple pasta recipe that uses just a few ingredients, but also packs a lot of flavor and is guaranteed to leave you with a full belly. If you haven't tried BANZA before, definitely give it a shot. Its one of our favorite must-haves in the cupboard and packs lots of protein and flavor. You can find the brand at your local supermarkets and even Target. But, if you prefer to use something on hand, go ahead and dabble with whatever pasta you'd like! Here's everything you will need for this Lemon Butter & Parmesan Pasta: Servings:  For  2 Ingredients 1 box of your favorite Banza pasta (or whatever you have on hand!
