Hump Day Grilling

Happy hump day, friends! What a gorgeous spring day it was today. Although I was cooped up for majority of the day working inside, as soon as work was out John and I decided to go for a nice long walk around the neighborhood. We walked about four miles and although we weren't racing, it was nice to just get some fresh air and let the sun and wind hit our faces. Spring is definitely approaching and I couldn't be more excited. Almost time to put the winter boots away and break out the flip flops.


Since the temperature reached about 60 degrees here on Long Island today, we decided to grill up some skirt steaks for dinner. I marinated the steaks in a simple mixture of garlic powder, teriyaki sauce and fresh ground pepper. I then topped them off with a generous amount of chopped scallions. The meat marinated for a good nine hours. While John got the grill heated up, I decided to pour myself a glass of white wine to celebrate this gorgeous day. I'm kind of obsessed with our cute porch sign. We had it made this past summer while visiting the North Fork from one of our favorite stores called The White Weathered Barn. They make a ton of handmade goods that are unique and one-of-a-kind. Take a look at their website, its worth a browse! One of our favorite pieces made by them are our antique wedding cake forks that have our initials and wedding date hand pressed on both. We keep them displayed in our dining room with all of our china. They are super sweet and are the perfect decorative touch.



While the grill continued to heat, John prepared a chopped salad and I baked a couple of sweet potato tater tots for some starchy filling sides. My favorite brand for healthy premade sides is Alexia Foods. They offer a large variety of precut potato and onion ring options and are half the calories and fat then other brands around. As soon as the grill started smoking away John threw the steaks on and cooked on both sides for about 7 minutes each. We like our steak medium rare so it was just the right amount of time for a nice juicy pink center. If you prefer to cook yours' a bit longer then do so. We like to keep it pretty simple with what we marinade our steaks in since the meat typically has so much flavor on its own. You can toss on some infused oils, spices or whatever you prefer to give your meat the perfect taste. Once the meat was cooked to our liking, we plated it and let settle for a few minutes. This is definitely one of our go-to week night meals since there isn't much prep and takes minutes to cook. And feel free to throw any sides with your steak. We usually like baked potatoes and roasted asparagus.


 

 


I'm really excited for the weather to start warming up so we can grill even more. Chicken, burgers, ribs, sausage, veggies, kebobs, we love it all. And who doesn't love a BBQed hot dog during the summer? I must admit, they are definitely one of my favorite barbeque eats at any summer get together. While searching through my cook books and Pinterest recipes for my brunch get together on Sunday, I came across so many fun and easy recipes. A new foodie blogger started recently following W+A and I was so excited when I saw a recipe he had posted for bacon, egg and cheese breakfast wontons. What?!? That is like everything we love rolled into one little pocket of love. I don't know about you guys, but these are right up my alley. Here's the recipe for anyone interested. Although I will not be making these for Sunday's gathering, I do have a few other treats on my menu that I am excited to make and the drink of the afternoon will be peach bellinis, one of my favorite brunch time cocktails. Well its just about that time to spend some q-t time with the hubs and there are so many great shows on tonight. Ahem, Empire anyone? We are ADDICTED! Almond Poppy Seed + Lemon Loaf

Happy Spring? Yes,  the question mark is needed since we had snow on Long Island today and its April second! I'd say about six inches total, but we were happy to see the sun appear and melt some of it away. We started on some yard work this week and were getting the itch to start doing some planting, but luckily we held out for now. Here's everything you will need:  Ingredients 3 cups of Kodiak Mix  1/2 cup of nonfat Greek yogurt 1 tsp vanilla extract  1 tsp of baking powder  3 eggs, beaten  4 tbsp of unsalted butter, softened  1/3 cup of brown sugar  3/4 cup of unsweetened vanilla almond milk  3 tbsp of lemon zest  1/8 cup

Chocolate Chip Banana Bread

Banana bread is always a go-to when you have extra bananas hanging around the house. Its perfect for breakfast or a sweet treat after dinner. Toasted up with some butter or topped with your favorite jam or nut butter. We whipped up this simple and delicious recipe in just about an hour (including baking time). Here is everything you will need for this lovely  Chocolate Chip Banana Bread: Ingredients 3 ripe bananas, mashed 1½ cup flour 1 teaspoon baking soda ½ teaspoon baking powder pinch of salt 5 tablespoons unsalted butter, melted ½ cup brown sugar 1 teaspoon vanilla extract 1 egg 1 cup of chocolate chips Directions  Preheat your oven to 350 degrees. In a large bowl, use a mixer to mix the melted butter and brown sugar until sugar is dissolved. Mash bananas with a fork and beat in with egg and vanilla extract. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Combine wet dry mixtures. Fold in most of the chocolate chips, reserving

Lemon Butter Parmesan Pasta

What's better than some comfort food on a chilly day? We love making this simple pasta recipe that uses just a few ingredients, but also packs a lot of flavor and is guaranteed to leave you with a full belly. If you haven't tried BANZA before, definitely give it a shot. Its one of our favorite must-haves in the cupboard and packs lots of protein and flavor. You can find the brand at your local supermarkets and even Target. But, if you prefer to use something on hand, go ahead and dabble with whatever pasta you'd like!
