Sunday Funday

Happy weekend W+A readers. I hope you all are enjoying the last few hours left in your Sunday. Despite the rain yesterday, John and I did a huge food shopping. We ended up bouncing around from Target to our local supermarket back to our meat market and then the pork store. We were on a mission to load up on everything we were low on and we definitely succeeded. I also needed to get all of the ingredients for my brunch spread for today. I hosted a jewelry party for some friends and family and it was a great success! I wanted to keep the menu filled with small bites that didn't take a ton of prep time. I truly enjoy entertaining because it brings two of my favorite things together, food and great company. I love seeing everyone enjoying food catching up and enjoying each others company. Here's a few snaps of some of our tasty brunch treats.


Greek yogurt parfaits topped with agave, honey almond granola and pomegranate. Aren't my mini treat cups adorbs!? I snagged them from Michael's and not pictured were mini spoons for scooping. We have some leftover which will be this week's breakfast. Kudos to John for popping out all of the pomegranate seeds. It was tricky, but he succeeded. Simply slice the pomegranate down the middle, fill a bowl with cold water and place half of the pomegranate into the water. Slowly break apart the pomegranate and the seeds will begin to fall out. Make sure to be gentle so none of the seeds burst.


Homemade quiche: spinach and onion with swiss cheese and bacon and cheddar. Recipes will be posted later on in this post. These are definitely a brunch must in my book and always hit the spot.


Donut kabobs anyone? These were a Pinterest steal and were so simple to put together. I snipped some festive straws in half (thanks John for the tip!) and skewered some donut holes and fresh strawberries on. I really wanted to make these because they were super cute and fun. You can add any fruit you'd like and even some bowls full of Nutella or honey for dipping!


These were a simple snack to munch and were super light. Blueberry "cheesecake" bites. Break up a few cinnamon or honey graham crackers top with mini Babybel or Weight Watchers swiss cheese wedges, add some blueberries or your favorite fruit and drizzle with honey. 


No brunch is complete without some sweet mimosas. We threw in a few bottles of champs, topped with OJ and sliced up a few oranges for garnish. I didn't break out my fancy champagne flutes, but instead stacked a few plastics from the dollar store and they definitely served their purpose. Not pictured were some other delicious treats made by my guests: baked blueberry buckle, french toast casserole (holy yum) and a cream cheese and pineapple salsa dip—all so delicious. Thanks again ladies!   

We stocked up on a ton of protein and veggies for the week and plan on getting back to eating super clean and healthy from the weekend. Its getting warmer out which means bathing suit season is approaching and time to snap out of winter hibernation. I'm excited to finally break out my spring and summer wardrobe and today's jewelry party really got my excited for maxi dresses, colorful corals, turquoise and sandals. April is rapidly approaching and I am pumped to celebrate John's 30th as well as other family birthdays. April is a huge birthday month for us which means lots of get togethers and celebrating. I already have the night planned for John's big 3-0 but still thinking up a knock your socks off gift for him. I have a few ideas I am toying with, but we shall see what the winner will be ;)

Is anyone else ready to move on from winter and prepare for the warmth of summer? We have our honeymoon to look forward to this July as well—Italy and Greece here we come! What plans do you all have this summer?

  
Quiche Recipe

Ingredients:
  • 4 large eggs, beaten
  • 1 cup half and half
  • Dash Salt and pepper
  • 1/4 cup diced onion
  • 1 cup chopped fresh baby spinach
  • 6 slices bacon (or turkey bacon), cooked and crumbled
  • 1 cup shredded Swiss cheese or mozzarella cheese
  • 1 (9”) pie crust, fitted in a 9” glass pie plate

Directions: 

Preheat the oven to 375 degrees. Saute onion and spinach in a skillet until spinach is wilted.
Combine the eggs, half and half, salt, and pepper and whisk together. Layer the spinach, onions, bacon and cheese in the bottom of the pie crust. Then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set and the top of your quiche a little brown. Cut into 8 slices and serve.

Almond Poppy Seed + Lemon Loaf

Happy Spring? Yes,  the question mark is needed since we had snow on Long Island today and its April second! I'd say about six inches total, but we were happy to see the sun appear and melt some of it away. We started on some yard work this week and were getting the itch to start doing some planting, but luckily we held out for now. Snow days are always the best days to test out a new recipe and typically we like to try our hands at baking on these chilly days. We just received some of Kodiak Cake's  new Almond Poppy Seed Power Cakes Flapjack + Waffle mix. We decided to use this delicious mix for some baking and the results turned out absolutely delicious. Here's everything you will need:  Ingredients 3 cups of Kodiak Mix  1/2 cup of nonfat Greek yogurt 1 tsp vanilla extract  1 tsp of baking powder  3 eggs, beaten  4 tbsp of unsalted butter, softened  1/3 cup of brown sugar  3/4 cup of unsweetened vanilla almond milk  3 tbsp of lemon zest  1/8 cup

Chocolate Chip Banana Bread

Banana bread is always a go-to when you have extra bananas hanging around the house. Its perfect for breakfast or a sweet treat after dinner. Toasted up with some butter or topped with your favorite jam or nut butter. We whipped up this simple and delicious recipe in just about an hour (including baking time). Here is everything you will need for this lovely  Chocolate Chip Banana Bread: Ingredients 3 ripe bananas, mashed 1½ cup flour 1 teaspoon baking soda ½ teaspoon baking powder pinch of salt 5 tablespoons unsalted butter, melted ½ cup brown sugar 1 teaspoon vanilla extract 1 egg 1 cup of chocolate chips Directions  Preheat your oven to 350 degrees. In a large bowl, use a mixer to mix the melted butter and brown sugar until sugar is dissolved. Mash bananas with a fork and beat in with egg and vanilla extract. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Combine wet dry mixtures. Fold in most of the chocolate chips, reserving

Lemon Butter Parmesan Pasta

What's better than some comfort food on a chilly day? We love making this simple pasta recipe that uses just a few ingredients, but also packs a lot of flavor and is guaranteed to leave you with a full belly. If you haven't tried BANZA before, definitely give it a shot. Its one of our favorite must-haves in the cupboard and packs lots of protein and flavor. You can find the brand at your local supermarkets and even Target. But, if you prefer to use something on hand, go ahead and dabble with whatever pasta you'd like! Here's everything you will need for this Lemon Butter & Parmesan Pasta: Servings:  For  2 Ingredients 1 box of your favorite Banza pasta (or whatever you have on hand! Cook as listed on on back of packaging)  1 lemon ¾ cup heavy cream 6 tbsp unsalted butter 3 oz finely grated Parmesan (about ¾ cup) Salt & pepper Crushed red pepper flakes (optional)  Directions  Prepare Banza: Bring at least 8 cups of salted water to a r
