Summertime and Lunchin' is Easy

Happy start of the week W+A readers! Apologies for being MIA for a few weeks, but we have been busy bees. John is off for the summer and its really fun having him around. Not only is he pretty spectacular at most of the household chores that I don't enjoy doing very much, but he makes the most delicious and healthy lunches too. Since I work from home we try to separate our duties during the day, him in one room, me in the other and its definitely been a bit of a learning curve, but I wouldn't have it any other way. I love having him home for the summer! Breakfast has been scrambled egg bakes with lots of veggies: peppers, onions, potatoes, zucchini and more. Sometimes we'll make these for lunch time eats too because they are so easy and filling. You really can throw any type of vegetables you like in and then slow cook over the stove or bake in the oven in a cast iron pan.  We've been eating lots of tuna and salads for lunch these past few days and John ...

Oven Roasted Stuffed Chicken Breast

Hey there readers! Happy Monday. Its been a busy few days with fun wedding celebrations and some family thangs to take care of. But, we got some cooking in here and there. I know I haven't posted in a bit, but I've been saving this one up for a busy Monday. It was a scorcher today and I tried my best to keep nice and cool with lots of water and light eats. I'd be lying if I said froyo didn't happen at some point tonight ;) The week will be another busy one, but we will try and get some cooking in. Its been a lot of light and easy meals since we haven't had much of an appetite because of the heat and its been too hot to constantly put the oven on. Thursday Night Roast Porkin'

TGIF W+A readers! The weekend is back and the weather is looking pretty nice. I've got my TGIF Spotify pumping to get me through the remaining of the work day. After dinner last night John and I decided to do a Homegoods and Target run since it was such a gorgeous night and we felt restless just hanging on the couch all night. We have our friends visiting this weekend so we had to grab a few odds and ends to have in the house. I also bought these happy little blooms to give the space a bit of perkin' up. Its almost 90 degrees on the Island today so I am making sure to stay super hydrated and cool. Drinking lots of agua and iced green tea. While I ran out yesterday evening, I stumbled upon this cool marinading container and figured I'd get it for John since he loves to grill. Spinach/Feta & Buffalo Chicken Burgers

The sun is trying to peek out today and I am hoping it does. I always feel more productive when the weather is nice outside. Last night we wanted to whip up something quick and healthy so we had some ground chicken in the freezer and decided to make homemade chicken burgers. I love a tasty beef burger, but sometimes steering away from red meat during the week is good. I figured I'd try a Greek spinach and feta burger and also spice things up with a buffalo chicken version as well. These were pretty simple to make and I prefer making them ourselves rather than buying them already prepared. This way, I can add more spinach if I like and even make my buffalo burgers a bit more spicy. We like it hot! Here is what you'll need for your burgers. Farmer's Market Pan Seared Scallops

What a lovely weekend it was. Although the week was filled with rain showers, the weekend shaped up to be picture perfect weather. John and I did a quick food shop and chopped up pineapple, watermelon, strawberries and grapes into a fruit salad. There is nothing more enjoyable in the summer than a yummy and refreshing fruit salad to satisfy your taste buds. I also bought some organic cherries, which are by far my favorite beach snack, especially when they are nice and chilled. John does a pretty legit job when it comes to chopping and prepping, so I let him do his thing in the kitchen. Yesterday was filled with baby and birthday celebrations, which were a lot of fun. Fritattas, Sunshine and Mussels

Happy hump day readers! I think its safe to say we've almost conquered this Wednesday. The week has been busy making the days go by a lot quicker. I remember savoring every last day of summer and now, being an adult and all, the days fly by. Remember when three months seemed like forever? I feel like John and I haven't had a second to breathe with so many things going on. Our calendars are packed to the brim and even though its all good things ahead, I am really looking forward to checking out for a few weeks while we honeymoon. T-mins 52 days until we are Italy and Greece bound! Call me crazy, but I already have bought and packed away honeymoon clothes. Lots of maxi dresses, rompers and comfortable shoes. I hear both places are scorchers in the summer, so I am looking forward to wearing light, airy comfy clothes. Puerto Rican Styled Pepper Steak

I kicked off my evening with some cardio at our gym across the street and did a few reps on the weight machines. Don't mind the sweaty (my body is dead) look on my face and the side ponytail. It started off at the center but after a good 45 minute jog it shifted a bit. Don't worry friends, I wasn't trying to bring back the 80s! After the gym I started on dinner. We had steaks in the freezer and I was craving some heat in my life. I decided to make a Puerto Rican-styled pepper steak and it definitely called for some ingredients I didn't have handy. I ran out to the supermarket and moseyed on down the Spanish aisle. Who knew there were that may different varieties of Sazon and Adobo? Latins know whats up when it comes to full flavor!
