Lightened Up Chicken Marsala

Monday is upon on once again friends. We hope everyone had a wonderful weekend. We spent most of Saturday and Sunday trying out some new restaurants on the island and catching up on some work around the house. If you know us, you know that we cook all week long, preparing lots of breakfast + healthy treats on Sunday to make our week a bit seamless. I love adding new recipes into the weekly dinner rotation so I decided to make a lightened up chicken marsala dish. Its one of our favorite dishes, but can be a bit up there in calories if your ordering it out at your favorite restaurant. So here is our version, just as delicious and flavorful, but without the extra calories + fat. Here's everything you'll need:  Ingredients 2 tsp of olive oil  3 c of fresh mushrooms, sliced  1 lb of boneless, skinless chicken breast 1 tsp dried thyme  1 tsp salt  1 tsp black pepper  1 cup of marsala wine  1 1/4 c of reduced sodium beef broth ...

Air Fryer Wings + Bacon Brussel Sprouts

We love using the air fryer for "frying" up some of our favorite dishes. From chicken parmesan to veggie fries and most recently bagels and empanadas, the options are endless. So we decided to try out wings this time around. It was the perfect meal for some Sunday football enjoyment. We also roasted up some crispy brussel sprouts with bacon and a cranberry balsamic drizzle for a complete meal. Here's everything you'll need for this dish:  Ingredients (for wings) 1 lb of chicken wings or drumsticks  1 c of nonfat greek yogurt  3 tbsp of paprika  1 tbsp of oregano  1 tsp salt  1 tsp pepper  Juice of 1/2 a lemon  1 c of Kentucky Kernel seasoned flour  1 c of hot wing sauce (Frank's or your favorite hot sauce) Directions Mix together yogurt and lemon juice with all seasonings and spoon into a ziplock bag. Add chicken and let marinate for at least 4 hours. In a flat plate evenly spread out your seasoned flour...

Guiltless Two Ingredient Pizza Dough

If you haven't noticed all the rage yet over the healthy two ingredient dough, you probably are living under a rock! Earlier this week we used the easy dough recipe to make delicious everything bagels, and let us tell you they were EVERYTHING. The dough appeared to be super versatile and the consistency was really nice. We decided to try it out as pizza dough and the results were impressive. Mix your dough the same as you would for your bagels, but double the ingredients.  Ingredients (yields two personal sized pizzas) 1 c of self rising flour (we used Pilsbury) 1 c of nonfat Greek yogurt pinch of salt  olive oil  1/4 c of mozzarella cheese  oregano garlic powder  (whatever other toppings you'd like) Directions  Mix together 1 cup of flour and 1 cup of nonfat yogurt in a bowl. Add a pinch of salt to mixture. The dough will be a bit crumbly until you knead it. Add flour to your surface and hands and knead into a ball, divi...

Lightened Up Shrimp, Bacon + Corn Chowder

Now that the weather is getting cooler (even though we've been experiencing a bit of a heatwave here in New York), we love cooking up all different types of hearty, healthy soups. They are easy one-pot solutions for dinner and typically freeze well for future meals. Last week we bought fresh large shrimp from our local grocery store so I decided to to do our own take on a shrimp and corn chowder with crispy turkey bacon to top. It took about 45 minutes total to prep and cook and I have to admit, the entire pot was gone! Here's everything you'll need below. Ingredients 5 slices of turkey bacon, cut into small pieces 1 pound medium shrimp, peeled and deveined 2 cups chopped yellow onion 1 tablespoon fresh minced garlic 1 teaspoon paprika ½ teaspoon dried thyme Pinch crushed red pepper 2-1/2 cups frozen corn kernels 3 cups chicken stock 1 cup  of organic half and half Salt and pepper, to taste Directions In a large Dutch oven over medium heat, fry the ...

Friday is here, friends and the first day of fall is just a week away, September 22 to be exact, which also happens to be my birthday (yay!). Even though this week has been a bit of a heat wave, I had all of the fixings to make beef stew and its the perfect dish to cook on a Friday and freeze for a later time. But tonight we snuggled up, went through our DVR and enjoyed some tasty stew and biscuits. Its a simple and easy recipe and can be tweaked to everyone's liking. Egg White Breakfast Muffins

Hey there W+A friends. What a beautiful weekend we had here on the Island. Unfortunately our mom and daughter trip to Savannah was cut short this week due to hurricane Irma. It was a bummer, but I sure am happy my mom and I got back to New York safe and sound and were definitely thinking about all of our friends, family and those down South getting hit by this crazy hurricane. It was definitely an interesting 24 hours to say the least, but I wouldn't have wanted to spend it with anyone else! We made the best of it and still got to experience some good ol' Southern eats along the way! Would you think otherwise? I decided to do some weekly food prep since John is back to work and we like to plan our meals for the week. I had bought some fresh veggies at Trader Joe's on Saturday and decided I could use some for our breakfast. I love prepping breakfast stuff since cooking in the morning doesn't always fit into my schedule. For anyone who has tried the egg white bites from S...

Fall + Homemade Sausage Bread

Welcome September! This month is one of my favorites not only because it is my birthday month, but September nights tend to get cooler and you can still catch a couple of warm days in between the summer/fall transition. September gets us excited for our favorite season and all of the seasonal foods that start to show up at our local grocery stores. I really enjoying getting in the kitchen and using our slow cooker for soups, stews and chili. This year I plan on making some of our oldies, but am looking forward to trying my hand at some new recipes I've been holding onto since last season. Every holiday my father-in-law makes one of my favorite appetizers...sausage bread. Its the one indulgent holiday treat I look forward to and will never turn down. Last weekend we were invited to our friend's home for a Labor Day BBQ. I figured I could make a fun veggie platter or 7-layer dip, but I decided to try my hand at my father-in-law's infamous sausage bread recipe. Here's...

Happy Mother's Day to all of our friends, family and W+A followers who are mamas. We appreciate all you do! Sundays are the perfect day for us to catch up on some writing and food prep for the week. This past weekend I was inspired by an old lunch spot that my coworkers and I used to frequent called Bulls Head. During the summer season, they would prepare the most delicious summer salad of fresh greens topped with their homemade crab cakes. Since their closing, I knew I wanted to recreate their dish, so we did! Here's what you'll need for this super simple recipe, a perfect dish to serve while dining al fresco with friends. Ingredients: 1 lb crab meat , jumbo lump/back fin 1 large egg 3 tbsp mayonnaise 1 tsp Dijon mustard 1/4 tsp garlic powder 1/2 tsp paprika 1/2 tsp salt 3 tbsp red bell pepper , finely diced 1/3 cup green onion , finely slice 1 tbsp parsley , chopped, fresh or dried 2/3 cup butter cracker crumbs oil , for frying ...

Shrimp Fra Diavolo With Linguine

We can feel spring approaching and are happy to say sayonara to this frigid weather. The warmer days get us excited for lighter dishes, summer vegetables, fresh fish and dining al fresco. Last weekend we decided to venture out to our local Stew Leonard's . For those of you who have never visited a Stew's, its a grocery store chain that offers baked goods, fresh meats and fish and many other specialty items. John and I love getting our fish from there when we can and they typically have really good sales. We decided to buy some shrimp for our W+A live cooking show this past Friday and it turned out to be a great choice. I knew I wanted to make something a bit light, but fulfilling at the same time, so shrimp fri diavolo over linguine it was! Its a great dish to prepare if you are having a dinner party or to impress that special someone. Here's everything you'll need.   Ingredients: 1lb shrimp, peeled and deveined 1 tsp salt 3 tbsp crushed red pepper fl...
