Coconut Curry Chicken + Coconut Martinis

Happy Monday W+A readers! The weekend flew by once again. John and I did a lot of yard week over the weekend. Some weeding, seeding, mulching and a little spring planting. We'll wait until the weather gets a bit warmer to start on our garden. Thank you all again for tuning into Cooking Live with W+A last Friday! We have almost 1K views on our video (woah!) So thankful to you all. We cooked up a delicious and healthy coconut curry chicken and paired it with the perfect coconut martini. Here's everything you'll need to make this meal. 


Ingredients:
2 tbsp honey
1/2 cup of shredded coconut
3 tbsp of coconut vodka
2 tbsp pineapple juice 
2 tbsp coconut milk
1 cup of ice


Directions:
Take a martini glass and dip the rim in honey. Make sure to coat all around.Then dip your sticky rim into some shredded coconut, making sure all of the honey is covered. Shake together 3 tbsp of coconut vodka (we used Skyy) and 2 tbsp of pineapple juice into a shaker with ice. Using a strainer, pour into your martini glass. Take a tablespoon and flip spoon side down. Spoon 2 tbsp of coconut milk over the martini glass to create a coconut milk layer. Serve and sip!



Ingredients:
3-4 large boneless/skinless chicken breasts  
1 small yellow onion chopped
1 red bell pepper chopped
4 tbsp of yellow curry powder
1 tbsp of Thai red curry paste
2 15 oz cans of fat free coconut milk
1-2 tsp of sugar
juice of 1 lime 
2 cups of thinly sliced red cabbage
4 tbsp of fresh chopped cilantro
4 cups of cauliflower rice (I used Green Giant fresh cauliflower rice from the produce section)


Directions:
Chop chicken into 1-inch (bite sized) pieces. Drizzle a large pan or skillet with oil over medium heat. Add chicken, onions, and peppers to pan. Saute 1-2 minutes. Sprinkle yellow curry powder over chicken and veggies and coat well. Continue to saute 5-7 minutes or until chicken is cooked through. Add red curry paste, coconut milk, sugar, and lime juice to pan. Stir over medium heat until sauce is begins to bubble, cover and cook for another 5 minutes. Serve with steamed cauliflower rice and garnish with fresh, chopped cilantro and shredded cabbage. Serve with lime wedges for squeezing on top. Make sure to add salt per tasting.

Air Fryer Wings + Bacon Brussel Sprouts

We love using the air fryer for "frying" up some of our favorite dishes. From chicken parmesan to veggie fries and most recently bagels and empanadas, the options are endless. Almond Poppy Seed + Lemon Loaf

Happy Spring? Yes,  the question mark is needed since we had snow on Long Island today and its April second! I'd say about six inches total, but we were happy to see the sun appear and melt some of it away. We started on some yard work this week and were getting the itch to start doing some planting, but luckily we held out for now. Snow days are always the best days to test out a new recipe and typically we like to try our hands at baking on these chilly days. We just received some of Kodiak Cake's new Almond Poppy Seed Power Cakes Flapjack + Waffle mix. We decided to use this delicious mix for some baking and the results turned out absolutely delicious. Here's everything you will need:

Slow Cooker Honey Parmesan Pork Roast

We made it to hump day! As I currently sip my coffee this morning, I have a batch of banana coconut chocolate chip energy bites (recipe to come) for a little after dinner or post gym snack baking in the oven. We had a pork loin in the fridge big enough to feed a small country so we decided to cut it and make three separate meals for the week. I typically roast my pork in the oven Cuban style and add some roasted potatoes, but I figured I could set it and forget it with this easy and DELICIOUS recipe below.
