Chocolate Chip Banana Bread

Banana bread is always a go-to when you have extra bananas hanging around the house. Its perfect for breakfast or a sweet treat after dinner. Toasted up with some butter or topped with your favorite jam or nut butter. We whipped up this simple and delicious recipe in just about an hour (including baking time). Here is everything you will need for this lovely  Chocolate Chip Banana Bread:

Ingredients
3 ripe bananas, mashed
1½ cup flour
1 teaspoon baking soda
½ teaspoon baking powder
pinch of salt
5 tablespoons unsalted butter, melted
½ cup brown sugar
1 teaspoon vanilla extract
1 egg
1 cup of chocolate chips


Directions 
Preheat your oven to 350 degrees. In a large bowl, use a mixer to mix the melted butter and brown sugar until sugar is dissolved. Mash bananas with a fork and beat in with egg and vanilla extract. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Combine wet dry mixtures. Fold in most of the chocolate chips, reserving a small handful. Pour batter into a greased loaf pan. Sprinkle remaining chocolate chips on top. Bake for 45 minutes. Allow bread to cool, then it will slip right out of the pan.

Happy Sunday W+A friends! It was a frigid weekend filled with freezing temps, but overall we had a great few days (including snow days) to relax and get some food shopping done. Simple + Easy Blueberry Muffins

Happy Thursday W+A friends! We've been busy in the kitchen lately testing out some easy and healthy recipes for you all. John and I love sweets, but we try extra hard not to indulge during the week. For us to be successful prepping is a must. Usually on Sundays we like to make a healthy treat that we can enjoy either for breakfast, during that 3 p.m. slump or for dessert. If you've been following the blog for a bit you'll know we love making our easy pumpkin chocolate chip muffins, but this morning I decided to use what we had in the cupboards and fridge. Slow Cooker Honey Parmesan Pork Roast

We made it to hump day! As I currently sip my coffee this morning, I have a batch of banana coconut chocolate chip energy bites (recipe to come) for a little after dinner or post gym snack baking in the oven. We had a pork loin in the fridge big enough to feed a small country so we decided to cut it and make three separate meals for the week.
