Slow Cooker Honey Parmesan Pork Roast

We made it to hump day! As I currently sip my coffee this morning, I have a batch of banana coconut chocolate chip energy bites (recipe to come) for a little after dinner or post gym snack baking in the oven. We had a pork loin in the fridge big enough to feed a small country so we decided to cut it and make three separate meals for the week. I typically roast my pork in the oven Cuban style and add some roasted potatoes, but I figured I could set it and forget it with this easy and DELICIOUS recipe below. I'm not embarrassed to admit that John and I pretty much polished off almost the entire pork loin. Here is everything you'll need to make slow cooker honey Parmesan pork roast: 


Ingredients
3 to 4 lbs of pork loin roast
2 tbsp dried oregano
2 tbsp dried basil
1/2 tsp black pepper
3/4 tsp salt
2 tbsp garlic, minced
1/2 c honey
2 tbsp olive oil
1/4 c soy sauce
2/3 cup Parmesan cheese, grated


Directions
Place pork loin in slow cooker. In a medium bowl, combine the dried oregano, dried basil, black pepper, salt, minced garlic, honey, soy sauce and Parmesan cheese, mix well. Pour the sauce over the pork loin roast into the slow cooker. Cover and cook on low for 6 to 7 hours. Remove the cooked pork loin roast from the slow cooker, reserving the liquid. Shred the meat with two forks. Add the reserved cooking liquid to a saucepan and bring to a boil. Reduce the heat and simmer until reduced and thickened. Pour the reduced, thickened sauce over the shredded meat and serve.

Pour sauce on top of your roast and cook on low for 6-7 hours

We paired our pork with some fresh green beans, but this recipe can be enjoyed with almost anything. And the best part is leftovers taste amazing the next day. Pile on top of a roll for pulled pork sandwiches, add to tortillas for tacos or throw on top of a salad for some added protein. Simple + Easy Blueberry Muffins

Happy Thursday W+A friends! We've been busy in the kitchen lately testing out some easy and healthy recipes for you all. John and I love sweets, but we try extra hard not to indulge during the week. For us to be successful prepping is a must. Usually on Sundays we like to make a healthy treat that we can enjoy either for breakfast, during that 3 p.m. slump or for dessert.
